At POPS you will get the chance to try Belizean specialties such as scramble eggs with CHAYA, the Belizean spinach full of Health and richer in iron than spinach, and a powerful source of potassium and calcium. Then there are the yummy FRY Jacks. You can stuff them with the scrambled eggs or whatever you want.
The bacon is crisp and yummy, the Orange juice natural, fruits in season on the side, refried beans and tortillas, waffles, pancakes and Hash browns, omelets, breakfast burritos and anything you need to get going for a busy day or to get pumped up for your jungle adventure of the day. Locals and tourists come here for breakfast so it is THE place to make new friends and gather any information you need.

Now this is my favourite. I usually ask for one over hard, with bacon, olives and corn tortillas. Today it was super special as Pop's added Hummus to my plate. It was heavenly. I was in hummus heaven.

Rice and beans are a staple in my country, Belize. This traditional Belizean recipe is super delicious, and coconut milk gives it an original flavor. It goes great with stewed chicken and potato salad or cole slaw.
Pop’s Restaurant is on a side street downtown San Ignacio. Colorful booths and brightly painted walls welcome you in, and the menu focuses on breakfast, served all day. Pop’s feels cozy, most guests are locals, who rave about the breakfast as being the best in town, but visitors are enthusiastically welcomed. Most meals come with fruit and I thought their fry jacks. Pop’s is open from 6:30 a.m. to 2 p.m., every day.
